double grilled, triple stack grilled cheese pizza
Okay… this one is just for fun (although it did turn out pretty good). I just decided what crazy thing I could come up with based on ingredients on hand. It’s got three kinds of cheese, pepperoni, tomatoes, and pizza sauce… what could go wrong. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 3 slices sourdough bread, or whatever bread you choose
- 4 tablespoons sweet butter, salted, melted (for brushing)
- 1/2 cup mozzarella cheese, freshly grated
- 1/2 cup sharp cheddar cheese, freshly grated
- 2 tablespoons parmesan cheese, freshly grated
- 6 to 8 medium pepperoni slices, thick sliced
- 3 tablespoons pizza sauce, your choice
- 1 medium tomato, thinly sliced

Step 1PREP/PREPARE

Step 2Gather your ingredients.

Step 3Take two of the bread slices, and brush one side with the melted butter.

Step 4Place in a skillet over medium heat.

Step 5Cook until nice and toasty, on one side, and then reserve.

Step 6Brush both sides of the third piece of bread with melted butter.

Step 7Toast both sides, and then reserve.

Step 8Take one of the single-toasted pieces of bread, and lay on a clean surface, toasted side up.

Step 9Brush 1/2 of the pizza sauce on the bread.

Step 10Add 1/2 of the mozzarella cheese.

Step 11Add the pepperoni slices.

Step 12Add 1/2 of the Parmesan cheese.

Step 13Add 1/2 of the cheddar cheese to the top.

Step 14Place the double-toasted piece of bread on top.

Step 15Brush with the remainder of the pizza sauce.

Step 16Add the remaining half of the mozzarella cheese.

Step 17Add the sliced tomatoes.

Step 18Add the remainder of the Parmesan cheese.

Step 19Add the remainder of the cheddar cheese.

Step 20Add the last slice of bread, toasted side down, and brush the top with some melted butter.

Step 21Flip and place into the pan. Reduce the heat to medium low, and then add a weight to the top of the sandwich.

Step 22Allow the sandwich to cook until the bottom begins to brown, and the cheeses begin to melt, about 5 - 8 minutes.

Step 23Remove the weight, and brush the top with the remaining melted butter.

Step 24Flip the sandwich over.

Step 25Return the weight, and allow the sandwich to finish cooking for an additional 5 to 8 minutes.

Step 26PLATE/PRESENT

Step 27Remove from the skillet and slice in half.

Step 28Serve with some chips. Enjoy.
