Double Grilled, Triple Stack Grilled Cheese Pizza
sourdough bread, or whatever bread you choose
sweet butter, salted, melted (for brushing)
mozzarella cheese, freshly grated
sharp cheddar cheese, freshly grated
parmesan cheese, freshly grated
6 to 8
pepperoni slices, thick sliced
pizza sauce, your choice
tomato, thinly sliced
2Gather your ingredients.
3Take two of the bread slices, and brush one side with the melted butter.
4Place in a skillet over medium heat.
5Cook until nice and toasty, on one side, and then reserve.
6Brush both sides of the third piece of bread with melted butter.
7Toast both sides, and then reserve.
8Take one of the single-toasted pieces of bread, and lay on a clean surface, toasted side up.
9Brush 1/2 of the pizza sauce on the bread.
10Add 1/2 of the mozzarella cheese.
11Add the pepperoni slices.
12Add 1/2 of the Parmesan cheese.
13Add 1/2 of the cheddar cheese to the top.
14Place the double-toasted piece of bread on top.
15Brush with the remainder of the pizza sauce.
16Add the remaining half of the mozzarella cheese.
17Add the sliced tomatoes.
18Add the remainder of the Parmesan cheese.
19Add the remainder of the cheddar cheese.
20Add the last slice of bread, toasted side down, and brush the top with some melted butter.
21Flip and place into the pan. Reduce the heat to medium low, and then add a weight to the top of the sandwich.
22Allow the sandwich to cook until the bottom begins to brown, and the cheeses begin to melt, about 5 - 8 minutes.
23Remove the weight, and brush the top with the remaining melted butter.
24Flip the sandwich over.
25Return the weight, and allow the sandwich to finish cooking for an additional 5 to 8 minutes.
27Remove from the skillet and slice in half.
28Serve with some chips. Enjoy.
29Keep the faith, and keep cooking.
