parmesan pasta with slow roasted veg and chicken

Had to come up with a recipe of all the things I love. I had to combine 2 recipes. Slow roasted veggies and pasta. NO ONE had what I pictured in my head. So.... here it is. Enjoy

Ingredients

  • 10 ounces grape tomatoes
  • 1 pound spiral noodles, uncooked
  • 1/2 cup shredded parmesan-powder
  • 1 medium green zucchini sliced in 1/2 " thick
  • 1 medium yellow zucchini-sliced in 1/2 " thick
  • 1 medium yellow onion-cut into small pieces
  • 1 small green pepper-cut into small pieces
  • - olive oil, extra virgin
  • 1 large red onion
  • 2 - chicken breast-cut into bite-size pieces

How To Make parmesan pasta with slow roasted veg and chicken

  • Step 1
    Secure a cookie sheet or jelly roll pan. Slice Zucchinis. Cut onions and green pepper. Add Grape tomatoes to cookie sheet. Drizzle heavily with Olive Oil, season with salt and pepper, then toss to coat well. Roast at 275 degrees for 1 hour, then up turn up to 300 degrees 1-1/2 hours
  • Step 2
    Meanwhile , Cook chicken until no longer pink. Set aside. Cook pasta until al dente'. lightly drizzle with oil and toss to coat with Parmesan.
  • Step 3
    Add Chicken and roasted veggies to Huge Pasta Bowl. Toss and drizzle olive oil. Serve & Serve.
