Chili is always good in the cooler months or any time for that matter. Here is one using winter squash.

Slow Cooker Crock Pot


  • 1 large
    onion, chopped
  • 1
    green pepper, chopped
  • 1
    sweet yellow pepper, chopped
  • 1 Tbsp
    olive oil
  • 4 clove
    garlic, minced
  • 1 lb
    ground saussage
  • 1 lb
    winter squash, peeled, seeded, chopped
  • 1 can(s)
    (14-1/2 oz.) diced tomatoes, undrained
  • 4-1/2 tsp
    chili powder
  • 1/4 tsp
  • 1/4 tsp
  • ·
    for toppings: shredded cheese, chopped green onion, sour cream

How to Make Winter Squash Chili


  1. Saute onion and peppers in oil until tender. Add garlic and cook one more minute.
  2. Crumble saussage into onion mixture and cook until no longer pink.
  3. Transfer to a slow cooker. Stir in winter squash, tomatoes, chili powder, salt, and pepper. Cover and cook on low for 7 to 9 hours.
  4. Serve with toppings of choice.
