Ingredients
- 1 large onion, chopped
- 1 - green pepper, chopped
- 1 - sweet yellow pepper, chopped
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 pound ground saussage
- 1 pound winter squash, peeled, seeded, chopped
- 1 can (14-1/2 oz.) diced tomatoes, undrained
- 4-1/2 teaspoons chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- - for toppings: shredded cheese, chopped green onion, sour cream
How To Make winter squash chili

Step 1Saute onion and peppers in oil until tender. Add garlic and cook one more minute.

Step 2Crumble saussage into onion mixture and cook until no longer pink.

Step 3Transfer to a slow cooker. Stir in winter squash, tomatoes, chili powder, salt, and pepper. Cover and cook on low for 7 to 9 hours.
