Chili is always good in the cooler months or any time for that matter. Here is one using winter squash.

Ingredients

  • 1 large onion, chopped
  • 1 - green pepper, chopped
  • 1 - sweet yellow pepper, chopped
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 pound ground saussage
  • 1 pound winter squash, peeled, seeded, chopped
  • 1 can (14-1/2 oz.) diced tomatoes, undrained
  • 4-1/2 teaspoons chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • - for toppings: shredded cheese, chopped green onion, sour cream

How To Make winter squash chili

  • Step 1
    Saute onion and peppers in oil until tender. Add garlic and cook one more minute.
  • Step 2
    Crumble saussage into onion mixture and cook until no longer pink.
  • Step 3
    Transfer to a slow cooker. Stir in winter squash, tomatoes, chili powder, salt, and pepper. Cover and cook on low for 7 to 9 hours.
  • Step 4
    Serve with toppings of choice.
