Who knows, maybe there have been a lot of sandwiches like this around but I know that the birth of this sandwich in my house came from the fact that we were looking forward to bacon, lettuce and tomato sandwiches one night for dinner and my husband forgot to bring the bread home! Well, you start to ask yourself what you could use for bread and the pancake was the first thought, not too appealing, but then the waffle became a reality. It worked so well that we eat them all the time now. I think they are catching on with the family and friends as well. True story!

Loved the basil mayo... I think it really made this sandwich.  Also, I never thought of using frozen waffles as bun. But boy was it good! Test Kitchen Avatar The Test Kitchen
