Who knows, maybe there have been a lot of sandwiches like this around but I know that the birth of this sandwich in my house came from the fact that we were looking forward to bacon, lettuce and tomato sandwiches one night for dinner and my husband forgot to bring the bread home! Well, you start to ask yourself what you could use for bread and the pancake was the first thought, not too appealing, but then the waffle became a reality. It worked so well that we eat them all the time now. I think they are catching on with the family and friends as well. True story!
1In small bowl, combine the mayonnaise, chopped basil and garlic powder. Blend well and set aside.
2Fry the bacon to the desired crispiness. Drain on paper towel. Slice the tomatoes. Toast the waffles.
3To assemble the sandwich, liberally spread some of the basil mayo on both waffles for sandwich. Place some of the mixed lettuce greens on the bottom waffle. Place 4 sliced tomatoes on top of the lettuce and pile on the bacon. Add some more lettuce on top of the bacon. Add the top waffle onto the sandwich and enjoy!
