ultimate bacon, lettuce and tomato waffle sandwich
Who knows, maybe there have been a lot of sandwiches like this around. But I know that the birth of this sandwich in my house came from the fact that we were looking forward to bacon, lettuce, and tomato sandwiches one night for dinner and my husband forgot to bring the bread home! Well, you start to ask yourself what you could use for bread and the pancake was the first thought, not too appealing, but then the waffle became a reality. It worked so well that we eat them all the time now. I think they are catching on with the family and friends as well. True story!

Loved the basil mayo... I think it really made this sandwich. Also, I never thought of using frozen waffles as bun. But boy was it good!

Ingredients
- 8 - Krusteaz or Eggo waffles
- 1 1/2 pounds applewood smoked bacon, depending on how much bacon you want per sandwich
- 1 bag prepared mixed lettuce greens
- 4 - tomatoes, sliced
- 1 1/2 cups mayonnaise
- 1/2 teaspoon garlic powder
- 1/4 cup fresh chopped basil
How To Make ultimate bacon, lettuce and tomato waffle sandwich

Step 1In a small bowl, combine the mayonnaise, chopped basil, and garlic powder. Blend well and set aside.

Step 2Fry the bacon to the desired crispiness. Drain on a paper towel. Slice the tomatoes. Toast the waffles.

Step 3To assemble the sandwich, liberally spread some of the basil mayo on both waffles for the sandwich. Place some of the mixed lettuce greens on the bottom waffle. Place 4 sliced tomatoes on top of the lettuce and pile on the bacon. Add some more lettuce on top of the bacon. Add the top waffle onto the sandwich and enjoy!
