Ingredients

  • 1 package ( 20 oz ) refrigerated cheese tortellini
  • 5 - italine sausage links
  • 2 tablespoons olive oil
  • 1 jar ( 15 oz ) roasted sweet red peppers drained
  • 1 can ( 15 oz ) pizza sauce
  • 1 cup ( 4 oz ) shredded mozzarella cheese
  • 2 tablespoons shredded parmensan cheese

How To Make roasted pepper torellini

  • Step 1
    cook the tortellini according to package directions. meanwhile, in a large skillet cook sausage in oil over medium heat until no longer pink, drain and cut into 1/4" slices.
  • Step 2
    place the peppers in a blender or a food processor cover and process until smooth.
  • Step 3
    dain the tortellini and add pureed peppers and pizza sauce to the skillet, and stire to combine.
  • Step 4
    cook for 5 minutes or until heated through. sprinkle with mozzarella and parmesan cheese, cover and heat until cheese is melted.
