honey glazed pork loin w/ winter veggies
My husband & I don't often eat pork or red meat but when we do & I make this, it's gone in days. I got the idea originally from my dad, yrs ago when he would make a big Sunday dinner.

Ingredients
- 4 pounds pork tenderloin
- 1 bag frozen picsweet farms ready to cook winter veggies, includes carrots, parsnips & onions
- 4 large granny smith apples, cored & sliced into thick wedges
- 1/3 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 teaspoon ground cinnamon
- 1 large sweet onion, sliced thin
- 1/4 cup honey
How To Make honey glazed pork loin w/ winter veggies

Step 1Heat oven to 400 degrees, Season pork with cinnamon, sea salt & black pepper. With a sharp knife, make 12 slits in pork loin about 3" deep.

Step 2Reserve 12 apple wedges, ( or slices,) for the slits in the pork. Put remaining apple wedges & onion slices, along w/the bag of frozen Picsweet veggies into the bottom of a large Dutch oven or baking pan, ( 9" x 13" is fine.)

Step 3Place an apple wedge, or slice into each slit in the pork loin. Place the pork loin over apples and veggies. Drizzle the honey all over the pork loin. Roast for about 55 minutes or until no longer red in the center of pork loin. I loosely placed foil over the pork for the 1st 20 minutes. This is an " all in one pan" meal. No need to make any sides to go with it.
