Camp Rice has become one of our favorite dishes. It can be either a side dish or the main course. The recipe originally came from a book on camping. Over 50 years ago I adapted the recipe to one I could use in the kitchen. Then 30 years ago I changed the recipe so I could cook it in a rice cooker. Now I have made some adaptations so I can cook it in the Instant Pot. With the Instant Pot I am able to cook this in just one pot. This is one of our favorite recipes and now it is easier and much quicker to make.

Ingredients

  • 2 - large onions, chopped
  • - a fist size chunk of salt pork or bacon, chopped
  • 1 cup long grain rice, uncooked
  • 1 large can tomatoes, about a quart
  • 1 tablespoon sugar
  • 1 teaspoon celery seeds
  • 1/4 teaspoon black pepper
  • 1 cup cheddar cheese, shredded

How To Make camp rice in the instant pot

  • Step 1
    Set Instant Pot to SAUTE. When the Instant Pot has heated up add the salt pork and cook for about 4 minutes stirring every 30 seconds or so.
  • Step 2
    Add the chopped onions and cook another 4 or 5 minutes stirring every 30 seconds or so.
  • Step 3
    Puree the tomatoes in a blender and add them to the Instant Pot along with rice, sugar, celery seed, and black pepper. Give a quick stir to incorporate the ingredients together.
  • Step 4
    Close the Instant Pot lid and push the RICE button. (Cooking rice is one of the programs available for the Instant Pot.)
  • Step 5
    After pressure cooking has finished allow the cooker to cool down naturally until the float valve drops down, this will take 10 to 15 minutes.
  • Spread shredded cheese over cooked camp rice.
    Step 6
    Open the lid and spread the shredded cheese over the camp rice.
  • Camp rice on the plate.
    Step 7
    Serve and enjoy.
