This is a fantastic way to use up that last little bit of barbecue. I like to use pork but chicken works just as well. It's easy to make this low fat by getting low-fat tortillas and non-fat or low fat cheese. The main flavor's going to be in the barbecue and the veggies. I prefer the flavor of yellow bell peppers with this but you can also substitute other colors of pepper.

Ingredients

  • 4 large flour tortillas
  • 1 cup shredded barbecue in sauce
  • 1 cup yellow bell pepper, chopped
  • 1 cup red onion, chopped
  • 2 cups mozzerella, shredded
  • 1/2 cup cheddar cheese, shredded

How To Make barbecue tortilla pizzas

  • Step 1
    Preheat oven to 400. Line a baking sheet with a Silpat or with aluminum foil that has been sprayed down with cooking spray.
  • Step 2
    Arrange tortillas on the sheet with edges touching. Top each tortilla with a quarter cup of the chicken the onion and the bell peppers until all is used.
  • Step 3
    Top the tortillas evenly with the cheese. Bake 10 to 12 minutes until the cheese is lightly browned.
