barbecue tortilla pizzas
This is a fantastic way to use up that last little bit of barbecue. I like to use pork but chicken works just as well. It's easy to make this low fat by getting low-fat tortillas and non-fat or low fat cheese. The main flavor's going to be in the barbecue and the veggies. I prefer the flavor of yellow bell peppers with this but you can also substitute other colors of pepper.

Ingredients
- 4 large flour tortillas
- 1 cup shredded barbecue in sauce
- 1 cup yellow bell pepper, chopped
- 1 cup red onion, chopped
- 2 cups mozzerella, shredded
- 1/2 cup cheddar cheese, shredded
How To Make barbecue tortilla pizzas

Step 1Preheat oven to 400. Line a baking sheet with a Silpat or with aluminum foil that has been sprayed down with cooking spray.

Step 2Arrange tortillas on the sheet with edges touching. Top each tortilla with a quarter cup of the chicken the onion and the bell peppers until all is used.

Step 3Top the tortillas evenly with the cheese. Bake 10 to 12 minutes until the cheese is lightly browned.
