pasta with white beans and fresh herbs

A great friend gave me this recipe many years ago and it is a dinner time staple at my house. Macaroni, parmesan cheese, fresh herbs, garlic and tomatoes make this dish a family favorite !

Ingredients

  • 1 can diced tomatoes, undrained
  • 1 - onion, diced
  • 1 - carrot, diced
  • 2 - garlic cloves, minced
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons chopped fresh basil or 1/4 tsp. dried basil
  • 1 teaspoon dried oregano
  • 1/4 cup olive oil, extra virgin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons sugar
  • 1 can 16 oz cannellini beans or white kidney beans, drained
  • 1 can garbanzo beans, drained (optional) i love them
  • 8 ounces macaroni or what small pasta you have on hand
  • 2 tablespoons margarine
  • 1/4 cup parmesan cheese, shredded
  • - garnish with fresh herbs

How To Make pasta with white beans and fresh herbs

  • Step 1
    Drain tomatoes, reserving 1/4 cup liquid.
  • Step 2
    Saute onion and next 5 ingredients in hot oil in a large skillet until onion is tender.
  • Step 3
    Add tomatoes, reserved liquid, salt, pepper, and sugar.
  • Step 4
    Cover, reduce heat and simmer for 10 min.
  • Step 5
    Stir in beans; recover and simmer another 10 min.
  • Step 6
    Toss cooked macaroni with butter:; top with bean mixture and sprinkle with parmesan cheese.
  • Step 7
    Serve immediately with crusty French bread. Garnish as desired, I use fresh herbs.
