pasta with white beans and fresh herbs
A great friend gave me this recipe many years ago and it is a dinner time staple at my house. Macaroni, parmesan cheese, fresh herbs, garlic and tomatoes make this dish a family favorite !

Ingredients
- 1 can diced tomatoes, undrained
- 1 - onion, diced
- 1 - carrot, diced
- 2 - garlic cloves, minced
- 2 tablespoons chopped fresh parsley
- 2 teaspoons chopped fresh basil or 1/4 tsp. dried basil
- 1 teaspoon dried oregano
- 1/4 cup olive oil, extra virgin
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons sugar
- 1 can 16 oz cannellini beans or white kidney beans, drained
- 1 can garbanzo beans, drained (optional) i love them
- 8 ounces macaroni or what small pasta you have on hand
- 2 tablespoons margarine
- 1/4 cup parmesan cheese, shredded
- - garnish with fresh herbs
How To Make pasta with white beans and fresh herbs

Step 1Drain tomatoes, reserving 1/4 cup liquid.

Step 2Saute onion and next 5 ingredients in hot oil in a large skillet until onion is tender.

Step 3Add tomatoes, reserved liquid, salt, pepper, and sugar.

Step 4Cover, reduce heat and simmer for 10 min.

Step 5Stir in beans; recover and simmer another 10 min.

Step 6Toss cooked macaroni with butter:; top with bean mixture and sprinkle with parmesan cheese.

Step 7Serve immediately with crusty French bread. Garnish as desired, I use fresh herbs.
