Based on Stephanie Lange's pasta recipe from her YouTube channel. I adjusted the amounts and added or removed spices to suit my family.

Ingredients

  • 1 - yellow onion, chopped
  • 2 - whole garlic, chopped
  • 2 packages fresh mushrooms, sliced or chopped
  • 3 cups vegetable broth
  • 2 cups non-dairy milk
  • 1 pound fettuccine pasta
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon coriander
  • 1 teaspoon sage
  • 2 tablespoons salt

How To Make one pot mushroom pasta

  • Step 1
    Sautee onion in large sauce pan over high heat until softened. Lower heat to medium.
  • Step 2
    Add garlic & mushrooms and sautee until softened.
  • Step 3
    Add vegetable broth and milk. Stir.
  • Step 4
    Add spices as deisred. Mix well.
  • Step 5
    Add pasta. Stir to coat all pasta in sauce.
  • Step 6
    Cover and lower heat to simmer, cooking until noodles are soft and sauce has reached desired consistency. Serve.
