mac n cheese, without milk
I was so hungry for Mom's "real" mac n cheese, you know with the old fashioned stringy long horn cheese (colby for the rest of you). There used to be a little country gas station a few miles from our house and the old boy who ran it sold long horn cheese by the slice, with crackers from a big barrel. Mom would make the best mac n cheese from that. I started this morning before I realized we were out of milk. I think you'll be surprised at what I used........

Ingredients
- 2 cups uncooked macaroni......i use dreamfields a low carb high fiber macaroni
- 8 slices 1/2 rounds of long horn cheese
- 1 package peppered gravy mix, according to directions

How To Make mac n cheese, without milk

Step 1Preheat oven to 375* Cook Macaroni according to package directions. Drain.

Step 2Spray a baking dish with cooking spray. Cover bottom of baking dish with approximately 1/2 the drained cooked macaroni. Top with 1/2 the cheese, top the cheese with 1/2 of the prepared gravy mix.

Step 3Pour remaining macaroni over cheese layer, cover with the remaining gravy and finally top with the cheese. Add enough water to the outside edge of your baking dish that you can see it.

Step 4Line a cookie sheet with foil. Place the baking dish on the sheet and bake for 1 hour. We ate this as a main dish, meatless meal. My husband always wants to know "where's the meat". NOTE: During WW2 Meatless Monday's were encouraged to save meat to send to our boys fighting. A tradition our family continued even after the war; while we baby-boomers were being born and fed at the table.
