I have a few recipes for healthy lasagna, but this is the easiest one so far.

Ingredients

  • 1/2 pound ground turkey breast
  • 1 tablespoon olive oil
  • 1 - 26 oz jar marinara sauce
  • 1 - 14-1/2 oz can diced tomatoes
  • 1 - 9 oz pkg oven-ready lasagna noodles
  • 2 cups part-skim ricotta cheese
  • 1 - 8 oz pkg reduced-fat, shredded mozzarella cheese
  • 1 - 10 oz pkg frozen, chopped spinach, thawed, squeezed dry
  • 4 tablespoons grated parmesan cheese.

How To Make healthy ground turkey and spinach lasagna

  • Step 1
    Spray a lg skillet w/ cooking spray, place over med-high heat. Saute turkey in oil until browned. In lg bowl, combine cooled turkey, marinara sauce, and tomatoes.
  • Step 2
    Spray a 4-quart slow-cooker w/ cooking spray. Pour 1 cup turkey mix into cooker. Layer on 3 noodles, ricotta cheese, mozzarella cheese, spinach and more sauce.
  • Step 3
    Repeat layers 2 times, ending w/ sauce. Cover, cook on low for 2-1/2 hrs. Sprinkle w/ parmesan cheese.
