fettuccine, cooked and drained
10 oz
frozen spinach, chopped
1 clove
garlic, finely chopped
1/4 c
olive oil
1/2 c
chicken or vegetable broth
1 tsp
dried basil
1 c
cottage cheese
1/2 tsp
1/4 c
grated parmesan or romano
1 Tbsp
chopped parsley

How to Make Fettuccine and Spinach


  • 1In a large skillet, cook spinach in oil for 5 minutes, stirring frequently, add garlic and cook another minute.
  • 2Add broth, basil, cottage cheese and salt. Stir over low heat until blended.
  • 3Toss spinach mixture, grated cheese and noodles together. Garnish with parsley and serve.
