Ingredients
- 8 ounces fettuccine, cooked and drained
- 10 ounces frozen spinach, chopped
- 1 clove garlic, finely chopped
- 1/4 cup olive oil
- 1/2 cup chicken or vegetable broth
- 1 teaspoon dried basil
- 1 cup cottage cheese
- 1/2 teaspoon salt
- 1/4 cup grated parmesan or romano
- 1 tablespoon chopped parsley
How To Make fettuccine and spinach

Step 1In a large skillet, cook spinach in oil for 5 minutes, stirring frequently, add garlic and cook another minute.

Step 2Add broth, basil, cottage cheese and salt. Stir over low heat until blended.

Step 3Toss spinach mixture, grated cheese and noodles together. Garnish with parsley and serve.
