Ingredients
- 15 oz. ricotta cheese
- 3/4 - 1 cup flour
- 1 1/4 cup parmesan cheese, shaker can variety works well
- 2 eggs, beaten
- 1/4 tsp. salt
- 1/8 tsp. black pepper
How To Make feather light ricotta gnocchi, quick & easy

Step 1Place all ingredients in a large bowl and mix until blended.

Step 2Lightly flour work area. If dough is sticky, pick up a small bit of bench flour. Take 1/3 of the dough and roll into a 1 - 1 1/2" wide rope. Cut rope to desired width and place on floured cookie sheet. Repeat with remaining dough. Cover with Saran Wrap and refrigerate until ready to use.

Step 3When ready to use, bring a large pot of salted water to a gentle boil. Carefully add 1/3 - 1/2 of the gnocchi to the pot. Stir briefly to prevent sticking. Boil gently until they float, 3-5 minutes. Drain. Serve with your favorite sauce.
