Ingredients

  • - 1 tablespoon butter
  • - 1 medium sized onion, diced small
  • - 3 teaspoons minced garlic
  • - 1- 2 teaspoons dried chili flakes - use more or less depending on the heat you want
  • - 1 pound (500g) good quality bacon, rind removed and diced
  • - 1 large jar passata (tomato sauce for north america - 24 fl oz/720 ml)
  • - 1 tin crushed tomatoes
  • - 1 teaspoon dried basil
  • - 1 teaspoon dried oregano
  • - 1/2 teaspoon pepper
  • - 1 tablespoon white sugar
  • - 2/3 cup water
  • - cooked pasta to serve - your choice

How To Make betty's bacon, chili and tomato pasta sauce

  • Step 1
In a large skillet/frying pan, heat the butter. Add the onions and cook until translucent (about 3-4 minutes). Add the bacon, garlic and chili flakes. Continue to cook and fry until fragrant (about 3 minutes)
  • Step 2
Add the remaining ingredients (use the water to "swish" around the passata/tomato sauce and canned tomato jars/tins to get everthing out).
  • Step 3
Once at a boil, reduce heat to a simmer and cook for a further 5-7 minutes. Serve over prepared hot pasta.
