Stephanie Lange's wrap recipe from her YouTube channel. I used the amounts she used in her video (as indicated by **) and since she very rarely uses measurements, unless specified, all other measurements are "to taste" :) Note: Since she used boiled beans and did not measure them out, I suggest using 1 can of beans, rinsed, where the recipe calls for it. She also included homemade cashew cheese in her video, but because there is no recipe for it, I chose not to include it.

Ingredients

  • BURRITO WRAPS
  • 1** - yellow onion
  • 1** large carrot
  • 1** - whole garlic
  • 1** large bell pepper
  • - black beans
  • - red kidney beans
  • - passata
  • - onion powder
  • - garlic powder
  • - paprika
  • - chili powder
  • - fresh baby spinach
  • - cherry tomatoes
  • - tortilla wraps
  • GUACAMOLE
  • - avocados
  • - red onion, finely chopped
  • - whole garlic, finely chopped
  • - balsamic vinegar
  • 1/2 - lemon, juice only

How To Make vegan burrito wraps with guacamole

  • Step 1
    Sautee onion, carrot, bell pepper & garlic over medium heat until softened.
  • Step 2
    Add beans, spices & passata. Continue to cook until beans are soft and heated through.
  • Step 3
    Meanwhile, combine guacamole ingredients in medium mixing bowl. Smash and mix well. Set aside.
  • Step 4
    Spoon bean mixture onto wrap. Add spinach, tomatoes and guacamole as desired. Wrap & serve.
