This comes from a vegetatian magazine and it was so long ago, I apolizize that I don't remember the name of the mag. This is lacto/ovo/vegan. As I have mentioned before I went vegetarian for 10 years, and have 3 vegetarians in my family, 2 of them vegan. This is very tasty and filling too.

Ingredients For tomato rubens on rye

  • 2 slice
    rye bread, we like seeded jewish rye
  • 2 slice
    swiss cheese
  • 1 Tbsp
    grainy deli style mustard
  • 2 slice
    ripe tomato
  • 1/4 c
    sauerkraut, well drained
  • 10 sprig
    of spray butter per slice of bread
  • 1 Tbsp
    thousand island dressing, or russian dressing

How To Make tomato rubens on rye

  • 1
    Spritz butter on one side of each slice of bread
  • 2
    place one l slice of cheese on each unbuttered side of bread.
  • 3
    Place tomato, sauerkraut and dressing next.
  • 4
    Grill in a heated teflon fry pan until golden and the cheese melts.
