supper in the south bean soup

For anyone who has ever eaten at a Cracker Barrel , you will know how really good the soup is. This soup recipe is from the Cracker Barrel Old Country store cookbook that I got from them 15 years ago. I love navy bean soup and this has became a favoret of mine, and I use it often. Lt'g filling and great to eat on those cold wenter days.

Ingredients

  • 1 package dried great northen beans ( or any beans of your choice )
  • 8 cups water
  • 2 - medim onions chopped
  • 1/4 cup butter
  • 2 - bay leaves
  • 1 clove garlic minced
  • 2 tablespoons parsley
  • 1 - ham bone or 2-3 cups ham cubed
  • 1 teaspoon salt
  • 1 teaspoon pepper

How To Make supper in the south bean soup

  • Step 1
    Place beans in a large kettle with water to cover. Bring to a boil and boil for one hour. Drain this water off beans and put beans back into the kettle.
  • Step 2
    Add the 8 cups of water and all other ingredients, Simmer over very low heat for 2-3 hours. or until meat comes off the ham bone. Serve hot.
