Ingredients

  • 1 medium eggplant
  • 1 tomato, sliced
  • 1 cup mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • salt & pepper

How To Make stuffed eggplant w/tomatoes & mozzarella

  • Step 1
    Pre heat oven to 350 degrees.
  • Step 2
    slice the eggplant into 3 parts, leaving attached to stem, apply salt on all the insides and set aside in a colander for 15 mins, to drain excess water.
  • Step 3
    place on a baking sheet and fan out, place tomato slices equally in his slice as well as mozzarella cheese, then sprinkle with garlic powder, salt & pepper, drizzle olive oil
  • Step 4
    bake 30 mins or till tender and cheese melted and bubbly.
