- 1 medium eggplant
- 1 tomato, sliced
- 1 cup mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- salt & pepper
How To Make stuffed eggplant w/tomatoes & mozzarella

Step 1Pre heat oven to 350 degrees.

Step 2slice the eggplant into 3 parts, leaving attached to stem, apply salt on all the insides and set aside in a colander for 15 mins, to drain excess water.

Step 3place on a baking sheet and fan out, place tomato slices equally in his slice as well as mozzarella cheese, then sprinkle with garlic powder, salt & pepper, drizzle olive oil

Step 4bake 30 mins or till tender and cheese melted and bubbly.
