Spring Fling Sandwich

Ingredients

1 pkgnaan ( comes 2 in a pkg- you will use both)

1/4 ckalamata olive sandwich spread
-
1/2 ccrispy-cooked pancetta pieces

1/4 csweet yellow pepper rings,lightly drained & chopped
-
1 cvery thinly sliced zucchini
-
1 cfresh corn kernels
-
1/2 cpickled baby corn, drained and chopped
-
1/2 cdiced green onions
-
1/2 cthinly sliced red onions
-
1 Tbsplemon juice
-
1 Tbspolive oil
-
1/2 tspkosher salt
-
1/8 Tbspcoarse black pepper
How to Make Spring Fling Sandwich
- In a medium bowl, toss together the pepper rings, zucchini, corn kernels, chopped pickled baby corn, green and red onions, lemon juice, olive oil, salt and pepper. Stir to coat all veggies. Let sit while you warm the naan.
- Place naan in microwave and warm slightly to soften about 40 seconds each on high.
- Spread each naan with olive spread, then sprinkle with crispy pancetta.
- Using a slotted spoon, heap veggies on one side of prepared naan an fold over the other side to make sandwch. Makes 2 large sandwiches.
