This is a great easy and quick one pot meal. It is vegetarian and if you want to make it vegan, just substitute vegan cheese. Everything else is ok. I couldn't believe how great this tasted when it was done.

Ingredients

  • 2 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 1 can fire roasted diced tomatoes
  • 1 can fiesta corn or mexi-corn
  • 1 can diced green chilies
  • 1 can black beans (drained and rinsed)
  • 1 cup sliced black olives
  • 1 cup quinoa uncooked - i used multi color
  • 1 cup vegetable broth
  • 4-5 stalks green onions sliced (including the greens)
  • 2 cups shredded mexican cheese
  • 2 - ripe avalados diced
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 11/2 teaspoons adobo powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • - lime juice for squeezing on the avocado

How To Make mexican quinoa one pot dinner

  • Step 1
    Put the olive oil and garlic in a large frying pan and sauce for one minute
  • Step 2
    Add tomatoes, chilies, corn, black beans, black olives, vegetable broth and dry quinoa.
  • Step 3
    Add chili powder, cumin, adobo, salt and pepper. Stir all ingredients together.
  • Step 4
    Cover and bring to a boil, then lower heat to simmer for 20 minutes.
  • Step 5
    While frying pan is cooking, chop onions and avocado. Drizzle lime juice on the avocado.
  • Step 6
    When 20 minutes is up, uncover and stir again. Spoon up and cover with cheese so it can melt. Then garnish with onions and avocado. Serve and enjoy!
