italian sausage and squash
One of those evenings when I was tired from work and had a couple of things to put together, and it turned out to be one of our favorite recipes of all times. Easy, delicious and filling.

Ingredients
- 2 tablespoons olive oil
- 1 package mild italian sausage links
- 2 large zucchini, spiralized (or sliced)
- 2 large yellow squash, spiralized (or sliced)
- 1/4 cup butter
- 1 clove garlic, minced (1 t. jarred/1/4 t. garlic powder)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated parmesan cheese
How To Make italian sausage and squash

Step 1In a skillet, heat olive oil on medium high heat, add sausage links and cook until almost done, turning down heat to prevent getting too brown and stirring occasionally. When done, slice into 1/2-inch slices, remove from pan and cover to keep warm.

Step 2In the same skillet, add butter and garlic (either clove, jarred or powder) and salt and pepper. Cook on medium heat about 1-2 minutes, stirring constantly. Add squash, stirring, and cook 3-4 additional minutes. It will take a little longer if squash is sliced.

Step 3Add cooked sausage slices and stir gently. Remove from heat and sprinkle with parmesan cheese.
