Hummus Pita Sandwich

Basic yummy sandwich that is good for packing on the run (no meat or mayo to spoil). You could easily add fresh or dried herbs, such as basil, to liven it up. I often make this without the green onion.

Ingredients

soft pita (i prefer papa pita brand from costco)
Some
athenos brand hummus
Some
purple cabbage shreds
Some
sliced tomato
Some
green onion, or other fresh or dried herbs (optional)

How to Make Hummus Pita Sandwich

Step-by-Step

  • 1Place pita on plate. :) (Wanted to be able to show you a picture of the brand of pitas I like.)
  • 2Spread pita with a thick layer of hummus over whole pita.
  • 3Place veggies & herbs, if using, on half the pita.
  • 4Fold in half.

    Done.
