Ingredients
- 1 box hodgson's mill vital wheat gluten (6.5 oz.)
- 1/4 cup flour
- 1 1/4 cups water or stock
- 1 tablespoon porcini mushroom powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon penzey's forward!
- 1 tablespoon soy sauce
- 2 tablespoons toasted sesame oil
How To Make heidi's seitan

Step 1Preheat oven to 325F.

Step 2Mix all ingredients in the KA mixer bowl. Mix with the paddle. Switch to the dough hook and knead 5 minutes.

Step 3Form a log using parchment paper. Twist ends. Cover with foil. Place on oven rack without pan.

Step 4Bake 45 minutes. Flip. Bake an additional 45 minutes.

Step 5Cool, unwrap, use.
