This makes a savory seitan to use instead of meat in a variety of dishes, e.g. a hearty risotto, soups, and stews.

  • 1 box
    hodgson's mill vital wheat gluten (6.5 oz.)
  • 1/4 c
  • 1 1/4 c
    water or stock
  • 1 Tbsp
    porcini mushroom powder
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    onion powder
  • 1/2 tsp
    penzey's forward!
  • 1 Tbsp
    soy sauce
  • 2 Tbsp
    toasted sesame oil

How to Make Heidi's Seitan


  1. Preheat oven to 325F.
  2. Mix all ingredients in the KA mixer bowl. Mix with the paddle. Switch to the dough hook and knead 5 minutes.
  3. Form a log using parchment paper. Twist ends. Cover with foil. Place on oven rack without pan.
  4. Bake 45 minutes. Flip. Bake an additional 45 minutes.
  5. Cool, unwrap, use.
