Ingredients
- 1 onion
- 2 cloves garlic
- 1 chili pepper
- oil
- 1 tablespoon flour
- 1 tablespoon curry powder
- 500 milliliters stock
- salt
- pepper
- yogurt, plain
- cilantro, fresh
How To Make curry sauce

Step 1Finely chop (or liquidize in a processor) the onion, garlic and chili pepper with a little water. Fry in a little oil until soft.

Step 2Add the flour and curry powder and stir until well mixed. Slowly add the stock, stirring all the time. Season with salt and pepper.

Step 3Simmer for 10 minutes, then add the meat, fish or vegetable of your choice. Simmer until cooked through.

Step 4Add a dollop of plain yoghurt, taste and adjust the seasoning. Sprinkle with some finely chopped coriander (cilantro) leaves. Serve with Basmati rice, pappadoms and chutneys of your choice.
