Another very tasty low carb recipe that I thoroughly enjoy! I also enjoy the ease of instant pot recipes. I use mine almost daily. Enjoy!

Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef or i use thin sliced sirloin
  • 5 cups chopped cabbage
  • 28 ounces diced tomatoes & chiles
  • 1 cup riced cauliflower - i make my own in my ninja
  • 1 small chopped onion
  • 1/2 cup carrots, diced
  • 1 1/2 teaspoons sea salt
  • 1 teaspoon each- oregano and dried thyme

How To Make ~ cozy cabbage & beef soup ~ ip

  • Step 1
    Turn pot on sauté. Once hot add oil and ground beef or steak. Stir and break up ground beef if using until browned..
  • Step 2
    Add onion and carrots. Sauté about 5 min, stirring occasionally. Turn off.
  • Step 3
    Add tomatoes and juice, cabbage, beef broth, cauliflower, thyme, salt and oregano. Stir together.
  • Step 4
    Place lid on pot and seal vent. Press high pressure button and set for 20 minutes. Let release naturally for 15 minutes. Release remaining pressure.
  • Step 5
    Stir re- season if need be. Stir and serve. Serving 1.5 cups, 160 cal, fat 7 g, 8 carbs, fiber 2 g, protein 13 g
