brie, pear and apricot sammie with sweet thai dipping sauce
This is a nice combo. Pears and Brie have been paired up for a long time. If you decide to make this, be sure to include the dipping sauce, it really makes this sing. Footnote on this is that this is the dish that sent me to Vegas in 2012 to the World Food Competition.

Ingredients
- 2 slices sourdough bread
- 3 teaspoons softened butter
- 4 ounces brie, sliced in 4 slices
- 1 - ripe pear, peeled and sliced
- 1 tablespoon apricot preserves
- 1 tablespoon potato chips, crushed
- - dipping sauce:
- 2 teaspoons each, apricot jam and sweet hot thai chili sauce
How To Make brie, pear and apricot sammie with sweet thai dipping sauce

Step 1Spread softened butter on each slice of bread.

Step 2Spread the preserves on one of the unbuttered sides.

Step 3Arrange brie on one unbuttered side, and top with desired number of pear slices.

Step 4Crush potato chips and put on top of sammie.

Step 5Grill on med low heat until brie is all melted and bread is golden.

Step 6Mix up dipping sauce, it's just equal amounts of hot sweet Thai chili sauce and apricot preserves. This really makes the sandwich sparkle.
