This is an easy one-skillet dish that can on the table in 30 minutes. The ingredients are simple, and there’s a good chance that you have everything you need, right in your own pantry and fridge. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • THE CHICKEN & SAUSAGE
  • 3 or 4 slices good bacon, chopped
  • 1 medium chicken breast, boneless, skinless, cut into bite-sized pieces
  • 6 ounces smoked sausage, cut thickly on the bias
  • - salt, kosher variety, to taste
  • - white pepper, freshly ground, to taste
  • THE SAUCE
  • 4 ounces white button mushrooms, stems removed, and sliced
  • 1/4 teaspoon salt, kosher variety, or to taste
  • 1/2 teaspoon white pepper, freshly ground, or to taste
  • 1/2 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1/2 medium red bell pepper, diced
  • 1/2 medium green bell pepper, diced
  • 15 ounces diced tomatoes (1 can) with juice
  • 1 teaspoon dried oregano
  • 1 tablespoon ground paprika
  • 1 pinch cayenne pepper, or to taste
  • 1 teaspoon coconut sugar
  • - salt, kosher variety, to taste
  • - white pepper, freshly ground, to taste

    PREP/PREPARE
  • Step 2
    THE CHICKEN & SAUSAGE
  • Step 3
    Gather your ingredients.
  • Step 4
    Place the chopped bacon into a medium-size sauté pan, or cast iron skillet over medium heat.
  • Step 5
    Cook until the bacon is crisp, drain on a paper towel, and reserve
  • Step 6
    Add the chicken, and smoked sausage to the pan, and sprinkle with a bit of salt and pepper.

    Cook until the chicken and sausage begins to brown, about 5 – 7 minutes.

    Remove from the pan, and reserve.

    THE SAUCE

    Gather your ingredients.

    Drain all but 1 tablespoon of the bacon grease from the pan, add the mushrooms, and the onions, and reduce the heat to medium low.
  • Step 12
    Cook until the mushrooms begin to release their moisture, and the onions begin to soften, about 10 – 12 minutes.

    Add the garlic and cook until fragrant, about 60 seconds.
  • Step 14
    Add the green and red bell peppers, and cook for an additional 4 minutes.
  • Step 15
    Add the oregano, paprika, sugar and cayenne, salt, and pepper, and stir to combine.

    Add the diced tomatoes, and stir to combine.
  • Step 17
    Add the reserved chicken and sausages.
  • Step 18
    Allow the mixture to lightly simmer, for an additional 15 minutes, stirring occasionally.

    Chef's Note: Before serving, do a final seasoning taste.

    Sprinkle the reserved bacon on top, put out some bowls and spoons, and serve it up to your happy guests. Enjoy.
