Ingredients
- PLAN/PURCHASE
- THE CHICKEN & SAUSAGE
- 3 or 4 slices good bacon, chopped
- 1 medium chicken breast, boneless, skinless, cut into bite-sized pieces
- 6 ounces smoked sausage, cut thickly on the bias
- - salt, kosher variety, to taste
- - white pepper, freshly ground, to taste
- THE SAUCE
- 4 ounces white button mushrooms, stems removed, and sliced
- 1/4 teaspoon salt, kosher variety, or to taste
- 1/2 teaspoon white pepper, freshly ground, or to taste
- 1/2 medium yellow onion, diced
- 2 cloves garlic, minced
- 1/2 medium red bell pepper, diced
- 1/2 medium green bell pepper, diced
- 15 ounces diced tomatoes (1 can) with juice
- 1 teaspoon dried oregano
- 1 tablespoon ground paprika
- 1 pinch cayenne pepper, or to taste
- 1 teaspoon coconut sugar
- - salt, kosher variety, to taste
- - white pepper, freshly ground, to taste

Step 2THE CHICKEN & SAUSAGE

Step 3Gather your ingredients.

Step 4Place the chopped bacon into a medium-size sauté pan, or cast iron skillet over medium heat.

Step 5Cook until the bacon is crisp, drain on a paper towel, and reserve

Step 6Add the chicken, and smoked sausage to the pan, and sprinkle with a bit of salt and pepper.

Step 7Cook until the chicken and sausage begins to brown, about 5 – 7 minutes.

Step 8Remove from the pan, and reserve.

Step 9THE SAUCE

Step 10Gather your ingredients.

Step 11Drain all but 1 tablespoon of the bacon grease from the pan, add the mushrooms, and the onions, and reduce the heat to medium low.

Step 12Cook until the mushrooms begin to release their moisture, and the onions begin to soften, about 10 – 12 minutes.

Step 13Add the garlic and cook until fragrant, about 60 seconds.

Step 14Add the green and red bell peppers, and cook for an additional 4 minutes.

Step 15Add the oregano, paprika, sugar and cayenne, salt, and pepper, and stir to combine.

Step 16Add the diced tomatoes, and stir to combine.

Step 17Add the reserved chicken and sausages.

Step 18Allow the mixture to lightly simmer, for an additional 15 minutes, stirring occasionally.

Step 19Chef's Note: Before serving, do a final seasoning taste.

Step 21Sprinkle the reserved bacon on top, put out some bowls and spoons, and serve it up to your happy guests. Enjoy.
