    artichoke bottoms
  • 1 can(s)
    refried beans
  • 1 can(s)
    mild green chiles
  • 1 pkg
    precooked mexican style rice
  • 1 can(s)
    chipotle in adobo
  • 1 pt
    fresh pico de gallo style salsa
  • 1 pt
  • 1 Tbsp
    smoked paprika
  • 1 tsp
    garlic. (minced)
  • 1 tsp
  • 1 pkg
    buritto size flour tortillas

How to Make Artichoke Burrito


  1. Chop artichoke bottoms into 1/2 inch square pieces. Sauté in olive oil, garlic, smoked paprika, and cumin. About 5-10 minutes until heated thru
  2. Put retried beans, and rice together with green chilies and a little salsa and heat thru Annan 5-10 minutes
  3. Heat flour tortilla ina a skillet, comas, or microwave
  4. Build your burrito, I added bean/rice mix, artichoke, salsa, guacamole, sour cream, 4 cheese Mexican blend, and some chipotle in adobo because I like the heat
  5. Roll and enjoy
