This is a quick easy meatless meal to throw together, filling and healthy

Ingredients

  • 3 cans artichoke bottoms
  • 1 can refried beans
  • 1 can mild green chiles
  • 1 package precooked mexican style rice
  • 1 can chipotle in adobo
  • 1 pint fresh pico de gallo style salsa
  • 1 pint guacamole
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic. (minced)
  • 1 teaspoon cumin
  • 1 package buritto size flour tortillas

How To Make artichoke burrito

  • Step 1
    Chop artichoke bottoms into 1/2 inch square pieces. Sauté in olive oil, garlic, smoked paprika, and cumin. About 5-10 minutes until heated thru
  • Total cheat meal with already made store bought ingredients
    Step 2
    Put retried beans, and rice together with green chilies and a little salsa and heat thru Annan 5-10 minutes
  • Step 3
    Heat flour tortilla ina a skillet, comas, or microwave
  • Step 4
    Build your burrito, I added bean/rice mix, artichoke, salsa, guacamole, sour cream, 4 cheese Mexican blend, and some chipotle in adobo because I like the heat
  • Step 5
    Roll and enjoy
