I love the light taste of lettuce wraps and I usually make them with an traditional oriental flavor but when I discovered this version I actually like it better. It is like a fajita without the heaviness of a tortilla. Great for a quick summer meal. The combination of the lettuce and the spices are incomparable. Try this you will love it and so will your diet!

boneless chicken breasts
1 pkg
fajita seasoning
1 large
red pepper sliced
1 large
green pepper sliced
1 large
yellow pepper sliced
1 large
onion sliced in half rounds
2 Tbsp
olive oil

romaine leaves
sour cream
cheddar cheese

How to Make Chicken Fajita Lettuce Wraps

Step-by-Step

  • 1Slice the chicken breasts into 1" strips and add fajita seasoning in a medium size bowl. Add 1 Tablespoon olive oil.Marinate in refrigerator for 15-30 minutes
  • 2Heat 1 tablespoon of Olive oil in a large saute pan add chicken mixture and cook for 3-5 minutes. Remove from pan and keep warm. Add peppers and onion to saute pan and cook until tender about 5 min. Add chicken and any juices that remain and cook for another 2-3 min.
  • 3Serve in romaine lettuce leaves. Top with shredded cheddar cheese and sour cream
