chicken fajita lettuce wraps

I love the light taste of lettuce wraps and I usually make them with an traditional oriental flavor but when I discovered this version I actually like it better. It is like a fajita without the heaviness of a tortilla. Great for a quick summer meal. The combination of the lettuce and the spices are incomparable. Try this you will love it and so will your diet!

Ingredients

  • 2 medium boneless chicken breasts
  • 1 package fajita seasoning
  • 1 large red pepper sliced
  • 1 large green pepper sliced
  • 1 large yellow pepper sliced
  • 1 large onion sliced in half rounds
  • 2 tablespoons olive oil
  • 12 - romaine leaves
  • - sour cream
  • - cheddar cheese

How To Make chicken fajita lettuce wraps

  • Step 1
    Slice the chicken breasts into 1" strips and add fajita seasoning in a medium size bowl. Add 1 Tablespoon olive oil.Marinate in refrigerator for 15-30 minutes
  • Step 2
    Heat 1 tablespoon of Olive oil in a large saute pan add chicken mixture and cook for 3-5 minutes. Remove from pan and keep warm. Add peppers and onion to saute pan and cook until tender about 5 min. Add chicken and any juices that remain and cook for another 2-3 min.
  • Step 3
    Serve in romaine lettuce leaves. Top with shredded cheddar cheese and sour cream
