avocado quinoa salad with chipotle lime dressing

I found this on the Cooking Quinoa website and I have subscribed to Wendy's eBooks. This is called a salad but it's really a meal. I used black beans instead of the pinto and it was DELISH! :)

Ingredients

  • 1 1/2 cups pinto (or black) beans, drained and rinsed
  • 1 1/2 cups cooked quinoa
  • 1 cup grape tomatoes, quartered
  • 1/2 cup fresh cilantro
  • 1 - avocado, pitted and chopped
  • 1 - chipotle lime dressing (see recipe)

How To Make avocado quinoa salad with chipotle lime dressing

  • Step 1
    In a medium bowl combine pinto beans, quinoa, tomato, cilantro and avocado.
  • Step 2
    Toss with desired amount of dressing and serve chilled or at room temperature.
  • Step 3
    Drizzle with additional dressing as desired.
