hearty unstuffed cabbage wedges

Ingredients
- 2 pounds lean ground turkey or chicken
- 1 tablespoon olive oil, extra virgin
- 1 large maui sweet onion
- 1 small leek, washed and sliced thin
- 2 cloves garlic
- 1 - green bell pepper, chopped
- 1/4 cup tomato paste, italian
- 1/2 cup water
- 3 pounds chopped fresh tomatoes
- 1 teaspoon fresh cracked black pepper
- 1 teaspoon sea salt
- 1 - bay leaf (crushed)
- 1 tablespoon fresh thyme leaves
- 1 - head of cabbage, cut into wedges
- 1 tablespoon olive oil, extra virgin
- 1/2 cup chopped fresh parsley
- 1 cup cojita cheese
How To Make hearty unstuffed cabbage wedges

Step 1Preheat oven to 375F

Step 2Saute onions, leeks, green bell pepper, and garlic in olive oil.

Step 3Add ground turkey or ground chicken, and brown.

Step 4Add tomatoes, tomato paste, water, all the herbs, salt and pepper.

Step 5Core the cabbage, chop up JUST the core and add it to the ground turkey mixture.

Step 6Bring to a boil, then reduce heat, cover, and simmer 30 minutes.

Step 7While the turkey is simmering, layer the cabbage wedges in a single layer on a baking pan.

Step 8Brush with olive oil, sprinkle with salt & pepper, and roast at 375 F for 20 minutes or until tender and browned.

Step 9When the cabbage is tender, remove it from the oven.

Step 10Place a cabbage wedge on a plate over some rice or noodles, and top with the ground turkey mixture.

Step 11Sprinkle with cojita cheese and chopped parsley.
