Ingredients

lean ground turkey or chicken
1 Tbsp
olive oil, extra virgin
1 large
maui sweet onion
1 small
leek, washed and sliced thin
2 clove
garlic
1
green bell pepper, chopped
1/4 c
tomato paste, italian
1/2 c
water
3 lb
chopped fresh tomatoes
1 tsp
fresh cracked black pepper
1 tsp
sea salt
1
bay leaf (crushed)
1 Tbsp
fresh thyme leaves
1
head of cabbage, cut into wedges
1 Tbsp
olive oil, extra virgin
1/2 c
chopped fresh parsley
1 c
cojita cheese

How to Make Hearty Unstuffed Cabbage Wedges

Step-by-Step

  • 1Preheat oven to 375F
  • 2Saute onions, leeks, green bell pepper, and garlic in olive oil.
  • 3Add ground turkey or ground chicken, and brown.
  • 4Add tomatoes, tomato paste, water, all the herbs, salt and pepper.
  • 5Core the cabbage, chop up JUST the core and add it to the ground turkey mixture.
  • 6Bring to a boil, then reduce heat, cover, and simmer 30 minutes.
  • 7While the turkey is simmering, layer the cabbage wedges in a single layer on a baking pan.
  • 8Brush with olive oil, sprinkle with salt & pepper, and roast at 375 F for 20 minutes or until tender and browned.
  • 9When the cabbage is tender, remove it from the oven.
  • 10Place a cabbage wedge on a plate over some rice or noodles, and top with the ground turkey mixture.
  • 11Sprinkle with cojita cheese and chopped parsley.
