hearty unstuffed cabbage wedges

Just an idea I had. Turned out pretty good!

Ingredients

  • 2 pounds lean ground turkey or chicken
  • 1 tablespoon olive oil, extra virgin
  • 1 large maui sweet onion
  • 1 small leek, washed and sliced thin
  • 2 cloves garlic
  • 1 - green bell pepper, chopped
  • 1/4 cup tomato paste, italian
  • 1/2 cup water
  • 3 pounds chopped fresh tomatoes
  • 1 teaspoon fresh cracked black pepper
  • 1 teaspoon sea salt
  • 1 - bay leaf (crushed)
  • 1 tablespoon fresh thyme leaves
  • 1 - head of cabbage, cut into wedges
  • 1 tablespoon olive oil, extra virgin
  • 1/2 cup chopped fresh parsley
  • 1 cup cojita cheese

How To Make hearty unstuffed cabbage wedges

  • Step 1
    Preheat oven to 375F
  • Step 2
    Saute onions, leeks, green bell pepper, and garlic in olive oil.
  • Step 3
    Add ground turkey or ground chicken, and brown.
  • Step 4
    Add tomatoes, tomato paste, water, all the herbs, salt and pepper.
  • Step 5
    Core the cabbage, chop up JUST the core and add it to the ground turkey mixture.
  • Step 6
    Bring to a boil, then reduce heat, cover, and simmer 30 minutes.
  • Step 7
    While the turkey is simmering, layer the cabbage wedges in a single layer on a baking pan.
  • Step 8
    Brush with olive oil, sprinkle with salt & pepper, and roast at 375 F for 20 minutes or until tender and browned.
  • Step 9
    When the cabbage is tender, remove it from the oven.
  • Step 10
    Place a cabbage wedge on a plate over some rice or noodles, and top with the ground turkey mixture.
  • Step 11
    Sprinkle with cojita cheese and chopped parsley.
