Ingredients

  • 2 lb
    lean ground turkey or chicken
  • 1 Tbsp
    olive oil, extra virgin
  • 1 large
    maui sweet onion
  • 1 small
    leek, washed and sliced thin
  • 2 clove
    garlic
  • 1
    green bell pepper, chopped
  • 1/4 c
    tomato paste, italian
  • 1/2 c
    water
  • 3 lb
    chopped fresh tomatoes
  • 1 tsp
    fresh cracked black pepper
  • 1 tsp
    sea salt
  • 1
    bay leaf (crushed)
  • 1 Tbsp
    fresh thyme leaves
  • 1
    head of cabbage, cut into wedges
  • 1 Tbsp
    olive oil, extra virgin
  • 1/2 c
    chopped fresh parsley
  • 1 c
    cojita cheese

How to Make Hearty Unstuffed Cabbage Wedges

Step-by-Step

  1. Preheat oven to 375F
  2. Saute onions, leeks, green bell pepper, and garlic in olive oil.
  3. Add ground turkey or ground chicken, and brown.
  4. Add tomatoes, tomato paste, water, all the herbs, salt and pepper.
  5. Core the cabbage, chop up JUST the core and add it to the ground turkey mixture.
  6. Bring to a boil, then reduce heat, cover, and simmer 30 minutes.
  7. While the turkey is simmering, layer the cabbage wedges in a single layer on a baking pan.
  8. Brush with olive oil, sprinkle with salt & pepper, and roast at 375 F for 20 minutes or until tender and browned.
  9. When the cabbage is tender, remove it from the oven.
  10. Place a cabbage wedge on a plate over some rice or noodles, and top with the ground turkey mixture.
  11. Sprinkle with cojita cheese and chopped parsley.
