shrimp with tomatoes and feta

This is a quick, easy, and healthy recipe my husband and I have enjoyed ever since I found it in a magazine several years ago.

Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 can tomatoes, canned italian-style and diced
  • 1/4 teaspoon crushed red pepper flakes
  • 10 - kalamata (greek) olives, pitted and chopped
  • 1 1/2 pounds shrimp, peeled and deveined
  • 3 ounces feta cheese, crumbled
  • 1 teaspoon dried oregano

How To Make shrimp with tomatoes and feta

  • Step 1
    Warm oil in large skillet over medium heat. Add garlic and cook until fragrant (about 1 minute). Stir in tomatoes and olives. Heat until boiling, then reduce heat and simmer until thickened (about 10 minutes).
  • Step 2
    Add shrimp and cook, stirring until shrimp are pink (about 5 minutes).
  • Step 3
    Divide cooked ingredients among four plates and top with feta and oregano just before serving. Serve hot.
