Shrimp with Tomatoes and Feta
2 Tbspolive oil
1 can(s)tomatoes, canned italian-style and diced
1/4 tspcrushed red pepper flakes
10kalamata (greek) olives, pitted and chopped
1 1/2 lbshrimp, peeled and deveined
3 ozfeta cheese, crumbled
1 tspdried oregano
How to Make Shrimp with Tomatoes and Feta
- Warm oil in large skillet over medium heat. Add garlic and cook until fragrant (about 1 minute). Stir in tomatoes and olives. Heat until boiling, then reduce heat and simmer until thickened (about 10 minutes).
- Add shrimp and cook, stirring until shrimp are pink (about 5 minutes).
- Divide cooked ingredients among four plates and top with feta and oregano just before serving. Serve hot.
