This is a quick, easy, and healthy recipe my husband and I have enjoyed ever since I found it in a magazine several years ago.

2 Tbsp
olive oil
3 clove
1 can(s)
tomatoes, canned italian-style and diced
1/4 tsp
crushed red pepper flakes
kalamata (greek) olives, pitted and chopped
1 1/2 lb
shrimp, peeled and deveined
3 oz
feta cheese, crumbled
1 tsp
dried oregano

How to Make Shrimp with Tomatoes and Feta


  • 1Warm oil in large skillet over medium heat. Add garlic and cook until fragrant (about 1 minute). Stir in tomatoes and olives. Heat until boiling, then reduce heat and simmer until thickened (about 10 minutes).
  • 2Add shrimp and cook, stirring until shrimp are pink (about 5 minutes).
  • 3Divide cooked ingredients among four plates and top with feta and oregano just before serving. Serve hot.
