Ingredients For shrimp with tomatoes and feta

  • 2 Tbsp
    olive oil
  • 3 clove
    garlic
  • 1 can
    tomatoes, canned italian-style and diced
  • 1/4 tsp
    crushed red pepper flakes
  • 10
    kalamata (greek) olives, pitted and chopped
  • 1 1/2 lb
    shrimp, peeled and deveined
  • 3 oz
    feta cheese, crumbled
  • 1 tsp
    dried oregano

How To Make shrimp with tomatoes and feta

    Warm oil in large skillet over medium heat. Add garlic and cook until fragrant (about 1 minute). Stir in tomatoes and olives. Heat until boiling, then reduce heat and simmer until thickened (about 10 minutes).

    Add shrimp and cook, stirring until shrimp are pink (about 5 minutes).

    Divide cooked ingredients among four plates and top with feta and oregano just before serving. Serve hot.
