How to Make Shrimp with Tomato and Feta
- For all the ingredients change quantity depending on your personal tastes. It still ends up delicious.
- Heat 1 tbsp. olive oil in skillet. Add 1-2 tsp. minced garlic (to taste) sauté for 1 minute. Add chopped tomatoes. Sauté till tomatoes just heated. Season to taste with salt pepper and basil. Add shrimp. Cook 4-5 minutes.
- Put mixture in individual oven safe dishes. Sprinkle with lemon juice and pepper. Top with feta cheese. Bake 15 - 20 minutes at 350.
- Serve with multigrain or wholewheat bread to sop up the juices. No oils or butter needed on the bread. Just dip in the juices that your fork can't pick up.
