Ingredients
- 5-6 medium tomatoes
- 8-10 ounces shrimp
- 1-2 teaspoon minced garlic
- 1/4 cup low fat feta
- - lemon juice,salt pepper,basil
- 1-2 tablespoon olive oil
How To Make shrimp with tomato and feta

Step 1For all the ingredients change quantity depending on your personal tastes. It still ends up delicious.

Step 2Heat 1 tbsp. olive oil in skillet. Add 1-2 tsp. minced garlic (to taste) sauté for 1 minute. Add chopped tomatoes. Sauté till tomatoes just heated. Season to taste with salt pepper and basil. Add shrimp. Cook 4-5 minutes.

Step 3Put mixture in individual oven safe dishes. Sprinkle with lemon juice and pepper. Top with feta cheese. Bake 15 - 20 minutes at 350.

Step 4Serve with multigrain or wholewheat bread to sop up the juices. No oils or butter needed on the bread. Just dip in the juices that your fork can't pick up.
