shrimp baked casserole "garithes youvetsi"

Youvetsi is the name of a round deep earthware dish in which the food is baked. Of course this dish can be cooked in any ovenproof dish or dutch oven. This delicious dish is a summer favorite in all areas of Greece especially the islands. Don't forget the fresh bread & wine:) Hope you try it and like it as much as my family does! Kali Orexi

Ingredients

  • 1 pound large shrimp, peeled but heads & tails left on, black intestines removed
  • 6 - medium sized tomatoes, peeled, seeded & pureed
  • 2 tablespoons olive oil with tomatoes
  • 3 tablespoons finely chopped parsely
  • 3 cloves garlic, finely chopped
  • 1/3 cup olive oil
  • 10 ounces feta cheese, crumbled (i usually add more than a cup)
  • 2 tablespoons butter
  • - salt & freshly ground pepper
  • - tabasco sauce (optional)

How To Make shrimp baked casserole "garithes youvetsi"

  • Step 1
    Simmer the pureed tomatoes with the 2 Tbsp olive oil for 20 to 25 minutes. Until they become a thick sauce.
  • Step 2
    Pour the sauce in an ovenproof dish. On top place the shrimp. Sprinkle with the parsley, garlic, olive oil and top with Feta cheese. Sprinkle with butter and season with lots of black pepper, little salt and the Tabasco sauce.
  • Step 3
    Bake for 10 minutes, til the Feta cheece melts and bubbles. Serve with plenty of fresh bread to dip into the delicious sauce:) Enjoy!
