Recipe Found and Used in a Deep South Cookbook. A Good Sausage Let me tell You, Nice Blend of Spices. Makes a Wonderful Sausage Gravy also.

Ingredients

  • GRIND PORK'S (2) TIMES THRU SAUSAGE GRINDER
  • 6 pounds lean pork
  • 3 pounds pork fat
  • ADD: REMAINING INGREDIENTS, & MIX WELL,
  • 4 tablespoons sage
  • 2 tablespoons pepper
  • 2 tablespoons salt
  • 2 teaspoons cloves
  • 2 teaspoons mace
  • 1 - whole nutmeg (grated)
  • 1 tablespoon pepper
  • 1 tablespoon cayenne pepper (optional)
  • RUN THRU GRINDER ONCE AGAIN.

How To Make deep south sausage (homemade) by freda

  • Step 1
    Follow Directions ABOVE in These Ingredients & MIX WELL!
  • Step 2
    Shape into Patties, Not too Thick, Flatten Nicely. Place on Baking Sheets, FREEZE, Then Place in Freezer Bags & Seal (I use Vacuum Sealing as in Seal a meal) Label & Date all Pkgs.
  • Step 3
    Remove from Freezer, Thaw, Then Fry until Browned on both sides. Enjoy for Breakfast.
