A Good Sausage Let me tell You, Nice Blend of Spices.
Makes a Wonderful Sausage Gravy also.

Ingredients

  • GRIND PORK'S (2) TIMES THRU SAUSAGE GRINDER

  • 6 lb
    lean pork
  • 3 lb
    pork fat
  • ADD: REMAINING INGREDIENTS, & MIX WELL,

  • 4 Tbsp
    sage
  • 2 Tbsp
    pepper
  • 2 Tbsp
    salt
  • 2 tsp
    cloves
  • 2 tsp
    mace
  • 1
    whole nutmeg (grated)
  • 1 Tbsp
    pepper
  • 1 Tbsp
    cayenne pepper (optional)
  • RUN THRU GRINDER ONCE AGAIN.

How to Make Deep South Sausage (Homemade) By Freda

Step-by-Step

  1. Follow Directions ABOVE in These Ingredients & MIX WELL!
  2. Shape into Patties, Not too Thick, Flatten Nicely.
    Place on Baking Sheets, FREEZE, Then Place in Freezer Bags & Seal
    (I use Vacuum Sealing as in Seal a meal)
    Label & Date all Pkgs.
  3. Remove from Freezer, Thaw, Then Fry until Browned on both sides.
    Enjoy for Breakfast.
