comfort green chili
My family enjoys a bowl all by itself with a few tortillas but sometimes I will make some mashed potatoes and put them in the bowl first and cover them with the green chilli and top with shredded cheese. You can also pour over French fries and top with cheese and sour cream or use it to smother burritos. However you choose, this is s hearty comfort food dish that won't keep you in the kitchen all day. Enjoy!

Ingredients
- 5 pounds pork ( bone in is fine if using slow cooked)
- 2 medium tomatoes, diced
- 1 can vegetable or chicken broth
- 3 cups aneheim chilies, chopped.
- 1 large onion, quartered
- 4-5 cloves garlic, diced
- 1 sprig thyme
- 1 tablespoon rosemary
- 3-4 teaspoons cumin
- 3 tablespoons paprika
- 1 each tablespoon garlic powder, onion powder and pepper.
- 4-6 cups water
- 1 1/2 tablespoons oil of choice.
- 1 can cream of celery soup.
How To Make comfort green chili

Step 1If using slow cooker add all ingredients and cook on low for about 6-8 hrs.

Step 2In large pot, heat oil on medium high heat, add thyme and cut pork and sear on all sides.

Step 3Remove thyme, add cream of celery,broth, onion, garlic and chopped aneheims. Let cook about 40 mins. On medium heat.

Step 4Add water and remaining ingredients, reduce heat to low, cover and let cook 4-6 hrs, until pork shreds easily with fork.stirring occasionally.
