THIS IS A DISH THAT HAS BEEN IN THE FAMILY FOR YEARS....I DONT MAKE IT OFTEN CAUSE HUBBY IS NOT INTO THE BITTERNESS OF BROCCOLI RABE...I LOVE IT N IT HAPPENS TO B A LORA DAY.....SO THIS IS WATS FOR DINNER TONITE ;)

Ingredients For orecchiette with brocolli rabe n sausage

  • 1/4 c
    olive oil
  • 4 clove
    garlic, peeld n crushd
  • 1 Tbsp
    salt plus 1/4 tsp
  • 1 lb
    orriechetta ...this is the pasta i always use but any kind of cut pasta will work ;)
  • 1/2 lb
    sweet italian sausage ...about 4 links...meat squeezd out of casing
  • 1/2 tsp
    crushd red pepper flakes (less can b usedfor less heat)
  • 3/4 c
    parmesean cheese...divided into 1/4 n 1/2 cup
  • 1 bunch
    broccoli rabe, cleand n roughly chopd

    I BLANCH MY BROCCOLI RABE IN BOILN WATER FOR THREE MINUTES TO RID SOME OF THE BITTERNESS THEN I IMMEDIATELY PUT IT INTO A WATER/ICE BATH TO STOP COOKN. THEN DRAIN

    PUT UP A LARGE POT OF WATER WITH A 1 TBLSPN OF SALT....ONCE BOILN ADD PASTA N COOK AL DENTE.

    WHILE PASTA IS COOKN ....IN A LARGE SAUCEPAN HEAT UP OLIVE OIL N SAUTÉ GARLIC TILL GOLDEN...1-2 MINUTES. NEXT ADD SAUSAGE MEAT N BREAK UP WITH SPOON N COOK FOR ABOUT 5 MINUTES

    ADD BROCCOLI RABE ALONG WITH A CUP OF PASTA WATER, CRUSHD RED PEPPER N SALT....STIRRN OCCASIONALLY N COOK FOR 5 MORE MINUTES OVER MED/HIGH HEAT UNTIL LIQUID IS SLIGHTLY REDUCED :)

    DRAIN THE PASTA N ADD TO SAUSAGE N BROCCOLI RABE...ADD 1/4 CUP OF PARMESEAN CHEESE N STIR INTO MIXTURE. ADDITIONAL CHEESE IS TO B SPRINKLED ON EACH SERVING....ENJOY :)
