fresh & easy tomato sauce with pasta

I made this a little spicy, but you can use less or more spice. Great and easy way to use excess tomatoes. You could also add cooked meat of your choice at the end before adding pasta. My family loved this. Just put all the ingredients except pasta in the pot and go read a book for 45 minutes, so easy the sauce makes itself. Like to serve this with a green salad and garlic bread.

Ingredients

  • 2 tablespoons olive oil, extra virgin
  • 1 - onion, yellow, medium, chopped
  • 2 1/2 pounds campari or roma tomatoes, halved
  • 1 tablespoon italian seasoning
  • 2 teaspoons oregano, dried
  • 3 - 6 cloves garlic, minced,
  • 2 - beef bouillon, cubes
  • 1/2 teaspoon salt, to taste
  • 1 tablespoon black pepper, to taste
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper, to taste
  • 13 ounces dried penne pasta, or pasta of choice
  • - fresh grated parmesan cheese, optional

How To Make fresh & easy tomato sauce with pasta

  • Step 1
    Prepare pasta according to package directions.
  • Step 2
    Chop onion, heat oil in soup pot. Saute onion in pot until it begins to soften, add Italian Seasoning and Oregano. Add garlic, Stir. While onion is softening cut tomatoes in half and add to pot. Cook on medium high for about 5 minutes or until tomatoes start to release liquid, add bouillon and stir.
  • Step 3
    Add the remaining spices, stir and cook, uncovered and simmer for about 45 minutes to reduce volume. Or until tomatoes are soft and sauce has formed. Add extra water if it gets dry to avoid burning and lower temperature if nessesary depending on how juicy your tomatoes are. Adjust seasonings to taste, (add meat if used) and pasta. Stir and serve. Sprinkle with cheese if desired.
