This recipe is slight variation on my mother's beef and noodles. I usually make this in the slow cooker, but it can be made on the stove-top instead--just a matter of preference. My family really loves this, maybe even more than chicken and noodles. My photos.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 1/2 pounds stew beef
  • 4 - beef bouillon, cubes
  • - boiling water
  • 1 pound egg noodles
  • - salt and pepper to taste
  • 1 pinch dried onion flakes
  • 1 pinch garlic powder
  • 1 teaspoon dried parsley flakes

How To Make ellen's from-scratch beef and noodles

  • Step 1
    Trim any fat from beef and cut into small cubes. Place oil in large pot or Dutch oven and heat over medium-high heat. Add beef cubes and brown slightly, stirring frequently. Drain beef on paper towels; then place in 4- to 5-quart slow cooker.
  • Step 2
    Dissolve beef bouillon cubes in about 4 cups boiling water; pour over beef. Add seasonings and stir.
  • Step 3
    Stir in noodles. Make sure there is enough liquid to cover--it will cook down. Cook on HIGH just until mixture begins to boil. Reduce to LOW setting and cook, covered, for 7-8 hours, or until beef is fork-tender.
  • Step 4
    NOTE: You can also make this in a Dutch oven on the stovetop with the same directions, except cooking time. Simmer on low heat for about two hours.
