Ingredients
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 cup celery, sliced
- 3/4 cup sliced carrots
- 1 cup cubed potatoes
- 3 1/2 cups chicken broth
- 1 can (17-ounce) whole corn
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 tablespoon prepared mustard
- 1/4 teaspoon white pepper
- 1 teaspoon paprika
- 2 tablespoons diced pimiento
- 2 cups (8 ounces) shredded cheddar cheese
How To Make wonderful cheesy vegetable chowder

Step 1Combine first 6 ingredients in a large Dutch oven; bring to a boil. Cover, reduce heat, and simmer 15 to 20 minutes or until potatoes are tender. Stir in corn; remove from heat.

Step 2Melt butter in a heavy saucepan over low heat; add flour, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in remaining ingredients. Cook just until cheese melts, stirring constantly. Gradually stir cheese mixture into vegetable mixture.

Step 3Cook over medium heat, stirring constantly, until thoroughly heated. Serve immediately.
