I hate the misconception that so many bad restaurants have created across America. Real down homemade Cajun/Creole food isn't spicy or hot unless someone makes it that way! What Cajun/Creole is, a blending of flavors in a way that they meld or marry each other into a symphony of flavor, NOT HEAT :) Do try my recipes I'm sure you will thoroughly enjoy them as much as myself and others do. This is a Style of cooking not throwing hot to some ingredients, Huge difference. Dave Bon Appetite!
