This is a recipe I put together, testing to see if I could make something from just "Whole Clean Food". I had never cooked Quinoa before, and kale was an Item I thought was "just for show". Well, I've been telling you all; I have to make the change to Clean Cooking and Eating. This was my first attempt. I adore Indian food, and most of it's cooking is clean. I thought way not try Indian spices as well. My family really enjoyed the meal too.

Ingredients

  • THE HARDEST PART OF THIS MEAL IS THE PREP. IT CAN BE DONE A DAY IN ADVANCE
  • 2 tablespoons olive oil, extra virgin
  • 3 cups fresh kale, chopped (remove thick steams)
  • 1 cup quinoa, cooked (follow package directions)
  • 2 medium carrots, grated
  • 1 small sweet potatoe
  • ANY VEGETABLE OF YOUR CHOICE
  • 1 medium scallion
  • 1 tablespoon ginger root (fresh) grated
  • 1 tablespoon garlic (grated)
  • - handful cilantro, fresh chopped
  • - handful of craisens (optional)
  • SPICES
  • 1 teaspoon cumin
  • 1 teaspoon garam masala (this can be found in specialty section
  • 1 teaspoon tumeric powder
  • 1 small chilli (optional)
  • - salt , pepper and lemon juice per taste

How To Make quinoa pilaf

    Step 1
    Prep ALL VEGETABLES, and cook Quinoa ( this counld be done the day before). Make sure to put quinoa in refrigerator until ready to use.

    Step 2
    Now, because I used sweet potatoes, I cooked them until slightly tender (with the Kale) then drain.
  • Step 3
    Heat the oil in pan, Put in cumin seed when the oil is hot enough seed should sizzle
  • Step 4
    When the cumin seeds start to splatter add the garlic and chilli saute 30 seconds
  • Step 5
    Now add chopped scallion give a nice stirr
  • Step 6
    Put in the salt and turmeric powder mix well for about 2 minutes
  • Step 7
    while mixing add you vegitable one at at time, stirring between each addition
  • Step 8
    Cover the pan, and let vegetables cook for 5-6 min. (tender)

    Add the Garam Masala, mix well Add Quinoa, mix well

    Add lemon juice, mix well Cook for a couple of minuts. ENJOY COOKING !
