This is what I call on the run pie , days where we are just passing ourselves twice .. And maybe have to be out most of the day . The last thing you want to do , when you get home is to be cooking in the kitchen for ages . This pie is so easy and quick and still healthy and well balance meal for the family ..

Ingredients For meat & potatoe pie ..

  • 1- 1/2 lb
    ground lean beef
  • 1- 1/2 c
    frozen mixed vegetables ( peas, sweetcorn,carrots,diced turip)
  • 1
    white onoin (peeled and chopped finely)
  • 2
    cloves of garlic crushed
  • 1 can
    oxtail soup ..
  • 6 to 7
    meduim size potatoes (peeled ,quartered and steamed to cook)
  • 1 Tbsp
    grapeseed oil

How To Make meat & potatoe pie ..

    Put on your oven to pre-heat @180c/350f... In a large frying pan add the rapeseed oil over a medium heat . Add to the pan the ground beef and cook for 5 minutes until the meat starts to brown . Then add to that your chopped onions and crushed garlic (use a garlic crusher )cook for a further 3 minutes for the onions to soften . Next add the frozen ready prepared vegetable (frozen mixed veg bag I purchase ) along with the can of oxtail soup (if the mixture appears too thick just add water ) . Turn down heat slightly and let simmer for couple of minutes ..

    Transfer the meat mixture onto a oven proof dish . Once the potatoes are done and you have smashed , spoon onto the top of the meat evenly. With a fork pat down the potatoes and score the top so the potato with crisp up in the oven . cook for 30 to 35 minutes until the potatoes are a crisp golden brown ..
