I got a recipe for greek spinach pies from a greek friend, and decided to make it even easier to make. I came up w/ these wedges of deliciousness! Great for a light lunch or dinner, or even a brunch. Calories: 251

Ingredients For greek spinach wedges
refrigerated pizza dough
low-fat cottage cheese
crumbled low-fat feta cheese
skim evaporated milk
10 oz pkgs frozen chopped spinach, thawed, squezzed dry.
How To Make greek spinach wedges
Form dough into a ball. Heat oven to 350. Lightly spray a pizza pan w/ cooking spray, preferable olive oil cooking spray. On floured surface flatten dough, roll out to 12" circle.
Spray lg skillet w/ cooking spray, place over medium heat. Add onion, garlic and basil. cook 4 mins. In bowl, beat cottage and feta cheeses. Beat in milk and egg whites until combined. Stir in onion mix and spinach.
Pour mix over dough, bake 1 hr, or until a knife inserted in center comes out clean. Cool slightly, cut into wedges.
