My husband was wanting Quinoa (I always toast my quinoa before using) for dinner, so I just through this together. **Toasting time and instructions are not given.

Ingredients

  • 1 medium onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 2 tablespoons curry powder
  • 2 cups toasted quinoa
  • 4 cups water
  • 1/2 cup raisins
  • 1/2 cup almonds, slivered and toasted
  • 1/2 cup dried apricots, chopped
  • 2 - carrots, finely chopped
  • 1/2 cup peas

How To Make curried quinoa

  • Step 1
    In a large saucepan, cook onion and garlic over low heat, stirring, until softened.
  • Step 2
    Add curry powder and toasted Quinoa , stirring for 1 minute.
  • Step 3
    Add water and carrots, bring to boil, cover, reduce heat to low and simmer 12 minutes or until Quinoa has absorbed all the water.
  • Step 4
    Stir in peas, apricots, almonds, raisins, or cranberries and serve.
