healthy southwestern turkey meatloaf
This is a great beef meatloaf substitute. It's much lower in fat, high in protein, and is easy to mix up and bake for a quick meal. It's very moist and the salsa gives it great flavor! Our family loves it.

When trying to eat healthier, you can still enjoy comfort food. This turkey meatloaf is proof of that. We loved the salsa in this meatloaf! It adds moisture to the ground turkey which can be dry at times. The mix of the bell peppers also add to the flavor of the meatloaf. Healthy comfort food!

Ingredients
- 1 1/4 pounds Jennie-o lean ground turkey
- 2 - eggs
- 1/2 cup salsa, mild
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped yellow pepper
- 1/2 cup chopped onions
- 1/2 cup Italian or plain bread crumbs
- 1 teaspoon lemon pepper
- 1/2 teaspoon salt
- - cumin and oregano, optional
How To Make healthy southwestern turkey meatloaf

Step 1Preheat oven to 350*.

Step 2In a large bowl, combine all the ingredients.

Step 3Press mixture into a loaf pan.

Step 4Bake for 35 to 40 minutes until cooked through.

Step 5NOTE: if using 1lb of ground turkey, only use one egg
