Greek and Middle Eastern flavors. Copycat recipe from a local restaurant. Only thing missing would be a slice of baklava for dessert to make the meal complete! ;)

Ingredients

  • 4 cups salad greens (romaine, mixed greens, baby spinach, your choice)
  • 1 cup cooked brown rice, leftover to room temperature (short grain preferably)
  • 1/2 cup hummus
  • 2 pepperoncinis
  • 4-6 fresh cherry tomatoes (grape tomatoes, or similar)
  • 1/2 small cucumber, sliced
  • 1/4 red onion, crescents
  • 2-3 tablespoons Feta cheese
  • 6-8 imported olives (kalamata, or similar)
  • 1/4 cup tzatziki sauce
  • 1-2 tablespoon fresh parsley or fresh basil, minced (for garnish)
  • ground paprika (try a wee bit of spanish smoked paprika or ground sumac for a different twist!)
  • 2 lemon wedges (garnish)
  • 1-2 pitas, cut into triangles

How To Make the mediterranean platter

  • Step 1
    Note: amount of ingredients given are all estimated. Wash the greens and spin dry. Place the greens on 1 or 2 salad plates (or a large serving platter.)
  • Step 2
    Divide and arrange the remaining ingredients onto the plate(s) or platter, ending with a garnish of fresh parsley (or basil),a sprinkle of paprika and lemon wedges. Decorate the pita triangles around the edge of the plate.
