shrimp scampi
My husband doesn't like shrimp, but even he really loves this dish. Its not a copy cat recipe, but to me it tastes just like Red Lobster shrimp scampi. The secret's the Parmesan topping!

Ingredients
- 1/2 cup white wine
- 1 1/2 sticks unsalted butter, melted
- 3 tablespoons garlic, minced
- - salt & pepper to taste
- 2 tablespoons fresh lemon juice
- 1/4 cup parmesan topping
- - chopped fresh parsley
- 2 pounds large, raw shrimp, peeled & deveined. leave tails on.
How To Make shrimp scampi

Step 1Combine the melted butter, wine, and garlic in a large liquid measuring cup. Place shrimp in individual oven proof dishes (2 lbs. of large shrimp divides about 12 into each of 4 dishes) or place all the shrimp into a glass baking dish. Pour liquid over shrimp.

Step 2Bake in a 350 degree oven for 15 minutes. Sprinkle with parmesan topping and return to the oven for 5 more minutes or until shrimp turns completely pink. Be careful not to over-bake.

Step 3Season with salt, pepper and fresh parsley to taste.
